They're supposed to be insert characters for viewers to project themselves onto, but also wish fulfillment, what the viewer wishes he was like back in high school.
I think a accurate MC to represent the average fan of harem anime would look like Arita from accel world, act like Makoto from school days(or at least try), and have the personality of Satou from NHK or Takumi from ChäoS;HEAd

a harem show without the MC would probably be just a group of 4+ girls hanging out. essentially the majority of SOL anime.

Yeah, I was thinking that the MC might exist, but only off camera. The group of girls would talk about the MC and fight over him and stalk him and fap to him, but we'd never have to look at him.
